My son offered to go to the Hub while he was practising taking the bus to uni. He is buying me some Kewpie mayonnaise and hopefully will be able to find some Tonkatsu sauce which we haven't tried. But unfortunately the shop was closed. We usually use Worcestershire sauce for our Japanese Pancakes which we love. We love the pancakes and the sauce lol. Tonkatsu is a Japanese Worcestershire sauce. We tried something like HP Sauce once and it was very nice, which makes sense as Tonkatsu seems fruity as well. Here is a place to buy it online. Buying one or two or three items online like that has worked well for me in the past. I found two new recipes for the pancakes, which I will add to my post on them here. Here is the basic idea behind Japanese Pancakes.
My son was making a family recipe of zucchini slice and has left over bacon which he bought English muffins for. Hence the recipe for muffin burgers. He only wants bacon and eggs, but I thought I would try this for a meal.
Swap recipe: Stir fried Beef & Vegetable Chow Mein (uses Singapore styled noodles and mince, in case we can't get the chicken)
Success from last week: Beef & Vegetable Bolognaise still rich like normal bolognaise
Bacon & Avocado Burgers, we did this on the fly, I think to use up the avocado. One of the best Turkish bread burgers we have made, I love them!

Homemade Kewpie Mayonnaise & Vegetarian Japanese Pancakes
We have been still making Vegetarian Japanese Pancakes adapted from another site. Post about it here. Here is our adaption so far:
Vegetarian Japanese pancakes
You will need for 12 rather large pancakes or many littler ones:
Pancake batter
1. ½ cup of self-raising flour
2. 1 ½ cup of plain flour
3. 2 large eggs
4. 3 cups of cabbage, thinly sliced
5. 2 cups grated carrot
6. 2 cups grated potatoes
7. 1 tbsp of chopped fresh mint leaves (optional best leave out)
8. 1 tsp of salt
9. 1 tsp of pepper
10. Some milk
11. Some oil
Mix the flours, egg, salt and pepper together add milk to give thick and not runny mixture. Add the vegetables.
Add some oil to a non-stick frying pan, spoon the pancake batter , flatten out with back of spoon.
Fry until both sides are golden brown.
To serve:
Serving without smoked salmon, spread thinly kewpie (Q.P) mayonnaise and some Worcester sauce (rather than tomato sauce only).
QP mayo is much less sweeter than ‘normal’ mayonnaise and that is why it goes well with the vegetable pancake and Worcester.

Wholemeal version from I Ate Brisbane which is sad as my husband wants to make wholemeal ones too, he is the one who wants to make his own mayonnaise as well.

Menu Thoughts

Last fortnight I had some pumpkin recipes left over. We had just finished Pasta with Pumpkin Sauce and used up our pumpkin. No specials online on pumpkin. The next day, Tuesday, my husband brought home one, then two more Kent/Butternut cross pumpkins, very pretty. They are rounder on the bottom and have green patterned bits on them.
So on with the pumpkin recipes!

Success from last week:
Vegetarian Japanese Pancakes. You know I love the ones from the taste site, well this recipe despite not having lovely fried pork mince embedded in the top, or nice steak pieces, it substantial, which is always an issue for me feeding a family. I like my meal to fill us up! We didn't have the salmon the recipe said it wasn't necessary. We tried our new Kewpie mayonnaise. It comes out like cream from the bottle. It made the pancakes really. We decided for our tastes, we are going to change the flour rations around. My daughter put on too much mayo, doesn't work.

All Out of Lentils
This picture is called Pantry, Green Gables Home, Prince Edward Island, Canada.
Monday sees some left over bacon that we made into soup Cabbage, Bacon & Potato Soup
A bit rough this menu, but also a pantry challenge. We had some things left over from last week, which is amazing really. Probably something to do with the gifted turkey and having left overs again after going back to a five person family this Monday after our son went back to the city after his break. I may buy mince and small amount of steak for the Japanese pancakes and the canned corn, eggs and ham, or go through the menu again and fine tune it.

Onion Pancakes with Vegetables & Chilli Sauce
The things that went well were the Tomato Onion Salad with Tamarind, definitely a keeper, the Japanese Pancakes were just as delicious with beef strips rather than pork mince, and Pork Chow Mein Noodles (we had them already) are absolutely gorgeous even without the special Chinese wine in the sauce, and with more plain vegetables. They have a similar taste to each other.
We had a mince dish that was a hit too (hamburger). I grew up on savoury mince and I thought is was lovely. Char-grilled Vegetables Savoury Mince with creamed corn rather than corn kernels.

Running Behind Menu
Though it seems like I am making up the menu as I go along, not so. Have been shopping in Coles while we brought down two cars to take mine to the workshop in the regional centre. No Coles here. I had a list of things like sweet chilli sauce etc. that we had run out of. Also stocked up on hard to get things like green olives and capers, as usually we don't buy those things here, just what is needed for specific recipes. So I have planned out everything, but haven't finished off the final week. The tuna bake was like a baked custard. The broccoli part was very well done. Sometimes I get annoyed with broccoli. I knew I had ordered bok choy with the fruit order so got some pork mince at Coles to go with it. Even thought ahead to bring the Eski/cooler.

Saturday ~ Bacon & Spinach Macaroni Cheese
Sunday ~ Savoury Mince with Potato Wedges
Monday ~ Tuna Shepherds Pie
I got my daughter to choose a Beef Rendang recipe for herself.
Success from last week:
Our menu didn't come to be for some recipes. We had to go onto the budget version. My husband brought out my stash of cans for blackouts and in it was 2 cans of frankfurters. He made this soup and it was very nice. We are considering adapting the recipe when we next make our pea and ham soup with kranksys and brussels sprouts which is a family staple, made from canned pea and ham soup.
Yellow Split Pea & Frankfurter Soup
It turns out that it is very similar to Nigellas soup that she published in a book which is probably why it is so nice.
Yellow Split Pea and Frankfurter Soup ~ Nigellas version. My husband made the other one, with two thirds more green peas than yellow and extra peas. It was very thick though. To be honest kranskys would taste better.
Here is the official recipe: Yellow Split Pea & Frankfurter Soup
Interesting recipes:
Lasagne using pork mince
Lentil Frankfurter Soup
A paella using wild rabbit
Basic Paella Valencia
Pork & Dill Cabbage Rolls (uses pork mince)
Chorizo, Corn & Black Bean Salad with Tortillas

Easter Menu
Here I am finishing my menu on Good Friday. Yesterday I went to the regional centre, it took all day to pick up some fire bricks for the heater for winter. It was a very warm day yesterday though, which is lovely, typical of the North East for Easter, just beautiful, and the scenery closer to home was the best, coming back.
We found a bulk Asian/Health Food shop there which is fantastic. They had split dried fava beans. It may help offset the price of LPG to drive there in the future.
We shopped at Coles and got some meat, however their mince was expensive this time. Did I buy any interesting food items while I was down there? Only harissa, which is good because I have come across it lately.
I was able to get this menu out using the vegetables with have and using some up, it is great, very happy. Bought some more black lentils (beluga). I based the menu on the meat I bought at Coles, which was loosely based around the vegetables and the fact our grown daughter is visiting and loves Sausage Casserole. We didn't have a vegetable delivery because of Easter, and luckily we had enough bread, because my husband and one daughter were away helping the others shift house, and I bought two loaves knowing about the Easter delivery.
Was very lucky I had a Hamper King Easter delivery of chocolate eggs.

Silverbeet Menu
I have so many bags of leaves in my fridge and want to buy more, have to check how they are going first I think. They come in freezer like bags in the fruit box. The silverbeet arrived all cute and young leaves. I was hopeful of some bratwurst to make the recipe in the wish list below, but my husband found some chorizo instead. I asked him to go to the shop a few miles from our other house which is not in this town to check on their meat which is always lovely. Our local shop had prosciutto which is good, I wasn't sure. It was very long.

Cleaning Out the Pantry Menu
You will notice some repeats from last week. One night we had left-overs and another night Mushroom Burgers as we got mixed up with the list and didn't get ingredients for what we had planned. This came about by the late night my husband was working and couldn't get to the shop, to plan out work for someone else to take his classes while we are away, which we had tea out.
My menu seems very heavy on feta, three recipes.

Add on Menu
Wasn't able to make all the recipes from the menu I made up, so confusing so added this. Haven't had to buy anything extra, so still planned in a way.
