Middle Eastern Chickpea & Vegetable Salad with is also heart friendly which I think was an accident. I loved all of it, the ingredients work well together so nothing seems hard or whatever.

I got a free booklet from Santitarium in the mail. I was very happy the meals are online as well. I saw a lovely recipe that contains sumac, spicy pumpkin & lentil tagine.

I found it in the heart friendly section (see sidebar), and wanted to try it because it fits in with the vegetarian pancakes theme we have going, love them.
Successes from last week:
Spicy Bean Hotpot I was worried about this. But apart from an issue about which chili to use (I would use whatever you usually put in your chili con carne) it was lovely. We particularly liked how the rice was thick so that made up for the watery tomato, one of my pet hates atm. My daughter had seconds and thirds of the rice (on different days).
Mexican Pita Pizzas this was a real occasion.

Menu Thoughts

Last fortnight I had some pumpkin recipes left over. We had just finished Pasta with Pumpkin Sauce and used up our pumpkin. No specials online on pumpkin. The next day, Tuesday, my husband brought home one, then two more Kent/Butternut cross pumpkins, very pretty. They are rounder on the bottom and have green patterned bits on them.

Vegetarian Japanese Pancakes. You know I love the ones from the taste site, well this recipe despite not having lovely fried pork mince embedded in the top, or nice steak pieces, it substantial, which is always an issue for me feeding a family. I like my meal to fill us up! We didn't have the salmon the recipe said it wasn't necessary. We tried our new Kewpie mayonnaise. It comes out like cream from the bottle. It made the pancakes really. We decided for our tastes, we are going to change the flour rations around. My daughter put on too much mayo, doesn't work.

So we may top up the food on the Wednesday, if it fits in with my bills. I will make up a list for the essentials and he will do his usual milk, cheese and washing powder run, and I will order bread to be delivered online which I usually do. Turns out I have ingredients for these recipes, just need a small amount of extras like mayonnaise and gerkins etc. I will be able to have the list ready from this menu for Wednesday.

Interesting recipes: Cabbage Vadai Fritters (made with red lentils) I have been paying better attention to the food blogs on Belinda's sidebar. Also Creamy Jerusalem Artichoke Soup a bit like the one we used to make, will have to check mine one day. My husband had the recipe out to show his friend, here it is:
Cream of Artichoke Soup
80g (3oz) butter
2 large onions, sliced
1kg (2lb) Jerusalem artichokes, peeled and sliced
1 1/4 cups water
3 1/2 cups milk
salt, pepper
3 tablespoons flour
5 tablespoons extra milk
1 egg
5 tablespoons cream
paprika
Melt butter and fry onion until soft but not brown. Add artichokes, water, milk, salt & pepper. Bring to the boil and cover and simmer for 20 minutes or until artichokes are tender. Put into blender, blend until smooth and return to pan. Mix flour with extra milk and stir into soup. Bring to the boil while stirring, simmer 2 minutes. Beat egg and add cream. Stir this mixture into soup, and reheat but do not boil. Adjust seasoning if necessary and serve immediately. Garnish with paprika.

Cheap & Vegetarian
What I have really been noticing lately after eating no meat, and with diminishing things in the pantry in the effort to balance the books (hopefully this week things will ease, either that or the books will be in very good shape or we will be outfitted well in clothes for the winter), is that the simple things are more appealing, like bread and butter. I want to get the ingredients to review my new paella pan too! Making things stretch is really not as cut throat with only three kids here most of the time, we had left-overs again recently.

"Trying to Unconfuse Me" Menu
Last week I was going to do a menu until Wednesday and I ended up doing the whole thing to Monday past Wednesday. However, I only shopped for until Wednesday until I had some more money. I also had to change my expectations on what I could buy so put in some swap recipes. So this post is to sort out where I am up to. How? I'll start off removing what we have already eaten and go from there. However I think this is going to be very tricky. One of the ingredients was accidently used up as well. Coles had eftpos go down when I was in there and I couldn't buy all that I wanted to the first time. Luckily tonight we are starting with left-overs.
I am going to make this into a $21 challenge it will make things easier.

Menu Musings
In 1968 I could have been eating this soup. I love black bean soup, but sadly it was never sold here.
I was going to post a picture of Old Mother Hubbard, but that was very depressing, a dusty looking wooden cupboard.
So here is my pic, of black turtle beans, for those Australians who haven't seen them. They make everything black, but I love them!
Still using the things we have on hand for the base for each recipe. Hopefully next fortnight will be easier. However, the recipes have been lovely so far.

The big question is, is aduki bean chilli a legitimate use for aduki beans? It seems so, going on this recipe called Mixed Bean Chilli Soup. We tried it last night, and yes, yummy.
A little more strange until I have tried it, aduki bean feijoada, Adzuki Bean & Cabbage Stew, I like feijoada, so I am curious. Going on what happened with the Mixed Bean Chilli Soup, yes it is like feijoada. Sour cream would have gone with it very nicely.
Anyway, I liked the cans of mixed pulses in the first recipe. They include soya, pinto, black-eye, red kidney and aduki beans, and chickpeas. They are available in the UK. It is used in this minestrone soup. It went well as a minestrone too. Aduki beans seem very versatile, for Italian, like black beans from the south and beyond, Japanese and like chilli, similar story to the black beans.

All Out of Lentils

Monday sees some left over bacon that we made into soup Cabbage, Bacon & Potato Soup
A bit rough this menu, but also a pantry challenge. We had some things left over from last week, which is amazing really. Probably something to do with the gifted turkey and having left overs again after going back to a five person family this Monday after our son went back to the city after his break. I may buy mince and small amount of steak for the Japanese pancakes and the canned corn, eggs and ham, or go through the menu again and fine tune it.

Avoiding Buying Meat Menu
I am avoiding buying meat so I don't have to go shopping at my usual place 50 minutes away. I may have a small shop when I go to the regional centre, I have to go there the day after to have a dressmakers fitting for my daughter. I will order the fruit and vegetables online as usual in two days time and make up a basics shopping list. I figure vegetarian is cheaper than meat. I'm trying to give myself a good base to start paying bills. I have used items I found in the pantry in my plan. Even some silverbeet in the garden.

Better Weather for Soup
I bought an Australian Woman's Weekly today, actually my husband did. I wanted to get some ideas about fashion. I don't usually buy it, but it turned out to be handy. I am doing a pantry challenge and found the omelette recipe really good. I had already ordered my fruit and vegetables which I am not scimping on as they are run down, and they had a special on red capsicum, and I had bought the vermicelli noodles last time when I saw them in Coles.
We took pot luck with the meat when my husband bought the usual UHT milk boxes, our eucalyptus washing powder and the cheese. We buy these from the farmer's shop and needed some meat for tonight. It was good as all we have left until the fruit order comes is cabbage. Thursday is my actual shopping day.

Menu & Pantry Challenge
No I haven't fallen off the menu planning wagon. I went for a small shop while I was buying deb dresses and shoes and other evening dresses etc. Mostly I bought the ingredients for tuna casserole we were to have that night as I would be home after the shops closed. I asked my husband to buy ingredients for the Greek Salad and the pies and things for when he was away on a business trip, or a trip for work to learn things. Obviously I have spent modest amount on the dresses, but since I don't usually do that sort of thing, I am doing a pantry challenge so my son can come home for the weekend as well, as it is Labour Day and Canberra Day, which is nice, it doesn't usually happen that way. Maybe it will again next year. I know I looked for borlotti beans recipes, as I always try to keep borlotti, lentils, chickpeas and butter beans in the pantry, 2 cans of each for recipes for 6 people.
Tuesday ~ Cheesy Chicken Pasta Bake (Chicken Mince)

Friday ~ Tuna & Mushroom Spaghetti (I think)
Saturday ~ I forgot what it was but it was planned out

Wednesday ~ Vege Burgers & Wedges that we didn't have because of left overs (a new thing in this house)
