Recipe for Italian Sausages

This is for normal Italian sausages, if you buy hotter ones, I suggest making chilli out of it, unless you like really hot things. This reicpe is a family favourite from AWW Italian Cookbook no.2

Fettuccine with Italian Sausage and Olives

500g fettuccine pasta
500g Italian-style sausages
2 tablespoons olive oil
150g mushrooms, sliced
2 cloves garlic, crushed
100g large green olives, seeded, sliced
1 teaspoon grated lemon rind
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
300ml cream

Add pasta to large pan of boiling water, boil, uncovered, until just tender, drain well. Cook sausages in dry pan over medium heat, turning regularly, about 10 minutes or until browned and cooked through; drain on absorbent paper. Cut sausages into 1cm slices.

Heat oil in pan, add mushrooms and garlic, cook, stirring, about 2 minutes or until mushrooms are soft. Stir in sausages, olives, rind, juice, parsley and cream, simmer, stirring occasionally, about 10 minutes or until reduced by one-third. Stir in pasta, cook, stirring, 3 minutes or until pasta is heated through. Serves 4.

Success from last week:

Chicken Coleslaw Very excited about this. Thought it would be plain. It is like getting a twister at KFC.
Black-eyed Bean & Vegetable Soup this soup is terrific. It reminds me of a soup we used to make years ago from the Italian Soup mix packet. I made it from the water of boiled silverside with added spices. This soup has the spice, mine balls, but this powdered. Very clever.

Success from last week:

Chicken & Capsicum Hotpot this dish I wasn't sure about. It is low-fat, and we raved about it when we were eating it. It is like a modern version of a late 60s dish stuffed Hungarian peppers which both my husband and enjoyed at the time.

Speaking of which I found this great recipe using pork mince and sugo.

Last time I bought for my menu but we made these instead. Only had to dash out for pies and chips I think, was a bit short on olives for the pasta salad but it didn't matter, and I think we got a couple of cans of soup and brussels sprouts to have with the kranskys, it is a standby so I thought of it on the spot. My new shopping day is Thursday 21st.

I bought smoked paprika when I was in Coles on a shopping trip. Nice to see some recipes using it. I have quite a lot of ingredients already, so that is good. Last shopping trip was still cheaper than what I used to spend last year on food, so I was happy.

Pork Sausage Recipes

In the past I was collecting these pork sausage recipes. Recently I have pork chipolatas from Coles, but not pork sausages as I haven't been driving to the shop I used to go to. But if I start doing that again, since then some new recipes have been published on the web. I will put the ones that look vaguely interesting to me, then when I try them I'll have to let you know my favourites.

Foodworks plus Oddbod Beans Menu

My husband seriously wants to go back to eating beans mostly, more than meat. We feel we lost weight as a pair of jeans I used to wear were very big on me this week. I think we were mostly beans etc. for five months March through August perhaps?

I found the cooking part from recipes that were not online last week very hard.

On to new recipes, our son will be with us for part of the time on a mid-semester break.

Because of a few ingredient shortages at the end of my last menu I have added three days using what was there, only buying an ingredient on Monday:
