Large Patty Pan Squash Soup

Spicy Lentil Soup
Ingredients

    1 cup red lentil (water to cover will be drained)
    1 1/2 tbsps olive oil
    2 small onion (chopped)
  3 garlic cloves (sliced thinly)
    1 tsp grated ginger     1 tsp turmeric
    3/4 tsp ground cumin
    1/4 tsp chili powder
    1 large yellow squash (diced 1 cm )
    1/2 cup carrot (diced small)
    5 tsp vegetable stock powder
    1 tsp salt
    1 tsp sugar

   ¾ cup filini
    3 tbsps chopped coriander leaves (optional)
    sour cream (important)

Method
Wash lentils and carefully inspect to bit of stone.

Heat oil in a heavy saucepan on med low. Sauté onion, garlic and
ginger until onion is nearly translucent add squash, salt ,sugar ,
zucchini, carrot, vegetable stock powder.

Stir in turmeric, cumin and chili powder, and cook until squash is
cooked a bit (softens).

Add lentils, bring to a boil, then reduce heat and simmer for 20
minutes (until vegetables are almost tender), the add filini and
simmer another 10 minutes.
To serve, ladle into bowls and garnish with coriander and a big dollop
of sour cream.

Frozen Beef Pattie Pizza

Beef burger pizza

Makes two pizzas

Ingredients
2 quantity Basic pizza dough
1 tablespoon olive oil
1 brown onion, chopped in half and sliced
10 beef burgers chopped into 5mm cubes
300g jar doritos mild salsa
125g can corn kernels, drained
1/4 cup tomato paste
3 cup grated tasty cheese
½ green capsicum thinly sliced

Method
Preheat oven to 200°C. Grease 2 @ 35cm round pizza tray
Fry the chopped beef burgers, separating the pieces so that it looks
like mince.  Don’t overcook, the burger pieces should still be soft.
VIP drain the fat.  Set aside
Cook the onion so that they are clear and still soft and moist, set aside

Roll dough into a 35cm round. Place on prepared tray.
Spread with ½ of all ingredients starting with Salsa then tomato paste
then corn, cooked meat, cooked onions and capsicum.
Spread with 1 ½ cups grated cheese.

Bake for 12 to 25 minutes or until cheese is cooked but not burnt.

New Year Menu

After I made up a menu of what I wanted to makes, which is salad because we had one of those catastophic days, well it felt like it hot winds and scary.  Then it became cold for the odd day as well.  We were able to go to the regional centre on one of those colder days, quite by accident and it turned out to be a sale day at my favourite clothes shop.  In the end I had enough food money left, and there wasn't much for the deposit on a dress and four lots of mince until next week.  Coles mince was cheap again and we got a cheap bottle of sweet and sour sauce.  I'll make the rest of the salads when some more money comes during the week.  Can't wait to try the haloumi one.  The fattoush salad we made into a wrap it was beautiful with the mint in it.

Fresh Pasta Menu

Well I bought up big on food last time, and found going into my next fortnight I won't have to buy food in the first week, just some in the minor pay, plus three meals.  Um yeah, makes sense to me lol.  I have put all the pasta recipes together unwisely, but found a good site with recipes with vegetables.  They seem expensive even without buying the pasta, but not too much so. 

Sunday 2nd ~ Gnocchi Bolognaise (uses Leggos bolognese chunky pasta sauce)

In the meantime my daughter had a cheese making class at school, and yesterday brought home a large amount of beautiful feta cheese.  She immediately made herself a Greek Salad  I chose to substitute a chorizo recipe from last week for this:

Spaghetti with Chorizo, Feta & Spinach

and then I am thinking of adding to the menu these two items to use it up and enjoy it, something where the cheese doesn't get lost.
